Because we have lots of beef in the freezer, I try to incorporate it into our meals, rather than use something I would have to go out and buy. So, I made meat and corn bread squares, a Better Homes and Gardens Cookbook recipe. This has a higher-calorie content than Cliff and I need on a regular basis.
We really love it, so I like to find an excuse to make it once in a blue moon.
MEAT AND CORN BREAD SQUARES

1 lb. ground beef
1 tbsp. cornstarch
1 tbsp. dried onion
1 tsp. chili powder
1/2 tsp. garlic salt
1 (16 oz.) can tomatoes
1 (4 oz.) can diced green chili peppers, drained
3/4 c. all-purpose flour
2/3 c. corn meal
2 tsp. baking powder
2 beaten eggs
1 (8 3/4 oz.) can creamed corn
1/2 c. milk
3 tbsp. cooking oil
1 c. shredded Cheddar cheese
1 tbsp. cornstarch

Brown ground meat. Drain fat. Stir in next 4 ingredients then stir in undrained tomatoes and chili peppers. Cook and stir until thick and bubbly.Combine flour, corn meal and baking powder. Combine eggs, corn, milk and oil. Stir into dry ingredients. Add cheese. Stir until moistened. Spread half of batter into a greased 9 x 9 x 2 inch pan. Spoon meat mixture over that. Top with remaining batter.
Bake at 375 degrees about 30 minutes or until golden brown. Let stand 5 minutes. Cut into squares. Serve with salsa if desired. Serves 6.

So, we had that, and as an alternate easy-warmup dish, I made Taco Soup. Cliff and I finished it off last night after our guests were gone.
TACO SOUP

1 lb lean ground beef (or turkey)
1 onion, chopped
1 pkg taco seasonings
1 pkg dry Ranch seasonings
2 large cans diced tomatoes, undrained
1 can Rotel tomatoes, undrained
1 can black beans
1 can pinto beans
1 can whole kernel corn

Brown meat and onion. Drain. Add seasonings. Drain beans and corn. Add to meat along with tomatoes. Simmer until well blended and hot. Eat and enjoy.Add a bit of grated cheese or sour cream and this simple soup is perfect for cold nights.
Yummy, yummy. Double good recipes. I adore cornbread. I love salsa. Anything with beans and corn in it is going to be my favorite dish. :)

ReplyDeletelordy, remember you told me months ago about the new gas stoves and how the burners would not light except with electric, well we have a new cook stove setting in the kitchen, I am pretty sure ours will have to have electric to it before we can use the oven or the burners.
ReplyDeleteI was trying to read and figure all this stuff but then I remembered my daughter does well with all the electronics so she will be able to show mw how or I saw where Fleta has one like this when she showed her new cabinets. I may have to call her up her to work on the cook stove just like I have to get her to "fix" my computer. if all else fails I will asking you for help. so far it is setting in the kitichen awaiting my son to come and hook it up.
