Has this ever happened to you?

A family gathering is happening tomorrow. You didn't plan it, but the big meeting is at your place, and that's fine. As it turns out, you really don't have to do much because other people are taking care of the meal; everybody loves grilled meats. Since God has blessed your garden by making it produce more cabbage than a town of 700 people could consume, you will be making cole slaw. That's it.
After all, you're still recuperating from surgery.
And then you realize that you ought to do something more, because you're pretty much recovered from the surgery. Nobody is bringing dessert, and you would be just the person to figure something out, using whatever is in the cupboard.  After all, you live in the boonies and it's ten miles to the nearest store... and you don't drive.
If you had a yellow cake mix or a white cake mix, you could make a dump cake or Jello cake. Unfortunately, the only cake mix you can find is a chocolate one.
OK, if you had a can of pineapple rings, you could make an upside-down pineapple cake from scratch.
No luck.
If you had a package of Oreo cookies you could make some Oreo Delight.
But no, there are no Oreos in the house.
The only option left would be to bake chocolate chip cookies, peanut butter cookies, and/or brownies.
But the first two require brown sugar, and you only have enough brown sugar for one.  Besides, cookies are SO much bother.
I'm such a loser these days.

    Chocolate Upside Down Cake

    Ingredients:
    •3/4 cup sugar
    •1 cup unsifted all-purpose flour
    •2 teaspoons baking powder
    •1/2 teaspoon salt
    •2 ounces unsweetened chocolate
    •2 tablespoons butter
    •1/2 cup milk
    •1 teaspoon vanilla extract
    •.
    •Topping
    •1/2 cup sugar
    •1/2 cup packed brown sugar
    •1 tablespoon unsweetened cocoa powder
    •3/4 cup boiling water
    Preparation:
    Directions for chocolate cake
    Grease and flour an 8x8-inch square baking pan. Mix sugar, flour, baking powder and salt together. Melt chocolate with butter. Stir chocolate mixture with dry ingredients along with milk and vanilla; beat until smooth. Spoon chocolate cake batter into prepared pan. For topping, combine sugar, brown sugar and cocoa; sprinkle evenly over batter, Pour boiling water over all. Bake in a preheated 350° oven for 35 to 45 minutes. Cool in pan on a wire rack. Invert chocolate cake onto cake plate so cake makes its own chocolate topping. Serve chocolate cake warm or cold.

  2. What a dilemma! I'd use what I had on hand. Make a chocolate sheet cake and some blond brownies with the brown sugar. That would feed several. If it were me, I'd skip the cookies because they are too time consuming. Good luck!

  3. I have no ideas! But hosting gatherings falls to me a lot because we have a fairly large house and big backyard, plus croquet and bocce sets. Hope the dessert works out OK!! :)

  6. Don't fret about it. Chocolate cake or brownies is fine. And for the record, you are the farthest thing from a loser. So don't put yourself down. Glad you got your ride in and that the weather cooperated.

  7. Like you said it wasn't your party to plan to begin with...nice your daughter is thinking about you and besides making home made coleslaw is a treat in its self. Relax and enjoy the gathering!

    Cole slaw is always good and so refreshing. I watched my taped Master Chef last night and they added shredded brussels sprouts to the slaw along with carrots and some other stuff. Have you ever grown brussels sprouts?

  13. no cause I don't cook any longer and when I did I made most out of a box to take to family afairs .I worked and had very little time to do any thing and since I retired I am not able to do much. such is the life of a xtyson worker.
